Xardija’s Old Time Bajan Salt Bread

Barbadians love salt bread and long before bakeries provided this staple, persons made their own. If you are interested in trying this old time Bajan salt bread recipe by Xardija’s, follow the instructions and see why we love this bread.

Ingredients

6 1/2 cups All Purpose Flour

2 Tsp granulated sugar

1 Tsp salt

2 Tbsp Vegetable oil

2 packs yeast

2 1/4 cups of warm water




Method

1. In a large mixing bowl add half of the flour, salt, oil, sugar, and yeast

2. slowly add warm water and mix until a stiff dough is formed

3.Add more flour until you have a dough stiff enough to knead

4. Lightly flour a smooth surface, and knead dough for 10 minutes until it is smooth and elastic

5.Place in a greased bowl and rest in a warm place for 40-50 minutes until dough has doubled in size.

(The dough is ready when poked and the finger indentation remains)

6.Divide dough into 12 equal portions and roll each one into fist size balls and place on a greased baking sheet.

7.Rest rolls in a warm place again until the dough has doubled in size.

8.Place in the center of the oven and bake for 25-30 minutes at 330°F until rolls are golden brown

9. Rolls should sound hollow when tapped
