Xardija’s Bajan Macaroni Pie

For many Barbadians no Sunday dinner or picnic would be complete without Bajan macaroni pie. For those who love mac and cheese, this is a similar concept but with a Caribbean twist. If you love macaroni and cheese, then check out this recipe from Xardija’s, the flavor is delightful!


2 Packs Macaroni Pasta

500g Cheddar Cheese

2 Cups Whole Milk

1 Chopped Onion

1 Oz. Thyme and Marjoram

1 Cup Ketchup

1 Tbsp Mustard

1 Tsp Pepper Sauce

1 Tbsp Tomato Paste (Optional)

Salt to Taste


1. Add salt to a pot of boiling water and add pasta

2. Cook pasta for 8-10 minutes stirring periodically

3. Strain 90 percent of the water and return to stove

4. Add half of the milk, ketchup, mustard, herbs and onions and combine

5. Add half of the cheese and tomato paste; mix until the cheese has dissolved

6. Add the remainder of the milk, and half of the remaining cheddar and combine

7. Add salt to taste

8. Place mixed pasta evenly into a baking pan and sprinkle remaining cheese on top

9. Bake at 320 – 330 degrees until golden brown
