Xardija’s Bajan Buljol Recipe is a delightful blend of saltfish and other tasty ingredients. If you have never heard of Buljol or tasted this delicacy, now may be a good time to try it. I am certain you will find this food delightful if you give it a try.
Ingredients
2 Lbs Boneless Saltfish (cod)
(finely dice or slice all ingredients)
1 Finely Red Onion
1 Firm Tomato (Seeds Optional)
1 Medium Cucumber (Remove Seeds)
1 Sweet Pepper (Remove Seeds)
¼ Cup Olive Oil
1 Tsp Bajan Pepper Sauce
1 Chopped Hot Pepper (Optional)
2 Oz. Chopped Cilantro
3 Oz. Chopped Parsley
1 Tbsp Lime or Lemon Juice
Salt and Pepper to Taste
Method
1. Boil salted cod fish to remove some of the salt
2. Strain and set aside to cool then frizzle salt cod fish (removing any bones)
3. In a large bowl combine saltfish and garnishes
4. Add pepper sauce, lime juice and olive oil
5. Add chopped parsley and cilantro and mix well
6. Add desire salt and pepper to taste
7. Place in the fridge to chill
8. Serve with breadfruit
