One of the staples of Bajan livelihood is the Barbados coconut sweetbread that you will find throughout the island. This tasty morsel is loved by many and works as a treat after a meal or can be the meal if you so desire. Ingredients
2 ½ Lbs Flour
2 Cups Grated Coconut
½ Tablespoon Baking Powder
1 Lb Brown Sugar
½ Lb Margarine
½ Lb Vegetable Shortening
1 Tsp Salt
2 Eggs (Optional)
1 Tsp Vanilla Essence
1 Tsp Almond Essence
1 Tbsp Coconut Essence
1 Tsp Nutmeg Powder
1 Tsp Cinnamon Powder
½ Cup Cherries (Optional)
½ Cup Whole Milk (Optional)
½ Cup Raisins (Optional)
1 Tbsp Melted Butter
Coconut filling
(optional)
1 Cup Grated Coconut
½ Cup Brown Sugar
½ Tsp Coconut Essence
½ Tsp Vanilla Essence
Method
1. Preheat oven to 330 – 350 degrees grease and flour your baking pans
2. Mix all dry ingredients together (sugar, flour, salt, coconut, nutmeg, cinnamon)
3. Add margarine and shortening crumble to a breadcrumb like texture
4. Add raisins and/or cherries (optional)
5. Add all wet ingredients (eggs, essences, milk)
6. Knead your dough until the mixture is well blended and firm. If necessary, add milk or flour for desired texture.
7. Add melted butter
8. Mould dough about ¾ way into pan
9. For optional coconut filling, lay half dough then insert coconut and cover with the other half
10. Brush the top with sugar water
11. Bake for 35 – 45 minutes until golden brown. Insert toothpick to test, upon removing it should be clean.
12. Remove from pan and let the bread cool before cutting.
Coconut filling method
1. In a small saucepan under low heat
2. Add sugar and allow it to melt slowly
3. Add coconut and essence into melted sugar
4. Combine and remove from heat
