Xardija’s Bajan fish cakes are delicious and great for parties and when you want something different. Most Barbadians love fish cakes and you can often see someone eating them, selling them in local shops or at various events. Ingredients
1 Lb Boneless Salted Cod
2 Lbs Pre-Sifted Flour
3 Tbsp Baking Powder
½ Lb White Onions
6 Oz. Chopped Chive
6 Oz. Chopped Thyme
6 Oz. Chopped Marjoram
6 Scotch Bonnet Peppers (Finely Chopped)
Bajan Pepper Sauce as Desired (Optional)
Salt to Taste (As Needed)
2 Cups Sunflower Oil (For Frying)
Method
1. Boil salted cod fish to remove some of the salt
2. Strain and set aside to cool
3. Finely chop all fresh herbs and frizzle salt cod fish (removing any bones)
4. In a mixing bowl add all fresh herbs and onions to the frizzled fish and mix well
5. Add water, baking powder and flour; mix to a smooth stretchy consistency
6. The batter should be able to easily scoop and drop from teaspoon (but not watery)
7. In a pot, place your oil for about 5 minutes on medium heat
8. Scoop and drop your batter; tossing continuously until golden brown
9. Serve while hot
